Small quesadillas, big on flavour! These crispy mini quesadillas are filled with flavourful refried beans with Mexican cheese, and topped with creamy Nacho Cheese Bites and a hint of spicy jalapeño for the perfect balance of savoury, cheesy and spicy. Serve them with a fresh guacamole and spicy pico de gallo for extra flavour and contrast. An irresistible snack for any drinks moment!
Start by making the dips. Mash the avocado and mix with tomato, garlic and lime juice for a quick, fresh guacamole. Season with salt and pepper.
For the pico de gallo, mix tomato, red onion, red pepper, coriander and lime juice into a fresh and tangy salsa. Leave both for a while to allow the flavours to soak in.
Meanwhile, heat a frying pan with a little olive oil. Spread one half of each half tortilla with refried beans and sprinkle with a handful of grated cheese. Fold in half to form small quesadillas. Fry them in the pan until golden brown and crispy on both sides, until the cheese is well melted.
Meanwhile, bake the Nacho Cheese Bites in the oven, air fryer or deep fryer. The correct baking times are indicated on the packaging.
Once the quesadillas are ready, stick a warm Nacho Cheese Bite with a slice of jalapeño on top with a tapas skewer on each half. Serve everything on a pretty platter, along with the guacamole and pico de gallo in small bowls.
